Silvestre in Latin means ‘wild’. The inspiration behind the name comes from the Latin phrase “Amant eau, sed relinquere silvestre '' which translates to “Love her, but leave her wild '' - this is the essence in which the wine is made. Hand selected grapes from two farms, and minimal intervention wine production. We aim to allow the exceptional quality of the grapes to speak for itself, while we simply guide it towards its final destination, a beautifully balanced wine in aroma, fruitful hints of peach, minerality and the right touch of acidity to hold the wine together. Our family aims to produce wine that is complex enough to enjoy with food, yet to remain simple enough to enjoy without.

While Stuart was completing his undergraduate at UCT, he worked at La Colombe restaurant in Cape Town, where he discovered his love for the vast world of different wines. Through contacts made from the restaurant, an opportunity arose to make the first Silvestre batch.
In 2017 we had decided a Chenin was to be the first cultivar to produce. The grapes come from three different old bush vine Chenin blocks, dating 36, 38 and 71 years old at the time of production sourced from Kaapzicht Vineyard. The grapes were whole bunch pressed, then the juice underwent natural fermentation in French oak barrels for 12 months. Additionally, bottle fermented for 10 months before release.
Silvestre now produces a Shiraz and a Rose to add to the collection.
